
Sweet Hearts Seafood Gumbo

1/2-1 onion, finely chopped
2-3 cloves elephant garlic, finely chopped
2-3 stalks celery, finely chopped
1 bell pepper, cut long strips then in half
2-3 red potatoes, chunked
1 can Italian stewed tomatoes
1 beef smoked polish sausage, cut into rounds
2lbs steamer clams, hole in the shell, rinsed
1lb small shrimp, raw, shucked
1-2 pats butter or some cooking oil
1/2 tsp. Creole seasoning
pinch cyan pepper
2 tsp. brown sugar1 tsp. red wine vinegar
1/4 tsp. liquid crab boil
1 tbls lime zestjuice of 1 lime
To start:
butter or oil a large chicken pan or 4 to 6 qr. pot, add:
1/2-1 onion, finely chopped
2-3 cloves elephant garlic, finely chopped
2-3 stalks celery, finely chopped

1 beef smoked polish sausage, cut into rounds
Cook on medium high till vegetables are starting to soften,
turn heat down to medium and add:
1 can Italian stewed tomatoes
2lbs steamer clams, hole in the shell, rinsed
1lb small shrimp, raw, shucked
1/2 tsp. Creole seasoning
pinch cyan pepper
2 tsp. brown sugar
1 tsp. red wine vinegar
1/4 tsp. liquid crab boil
1 tbs lime zest & juice of 1 lime
Simmer, covered, for about 20-40 min. Stirring occasionally. enjoy
